Spices and combinations of them used in our cooking are the secret to the aromatic exotic foods of India. There are about 80 spices found around the world, of which 50 are from India.

There are some unique asian vegetables indigenous to India. The tropical climate conditions around the year across most regions of the country make it easy to grow these vegetables.

Good healthy cooking is possible with the right vegetables and ingredients. Proper utensils can also make a difference in taste.

The first step of course is becoming aware of all the fresh food markets around your area. I try not to buy too many at a time since fresh vegetables last for about 10 days if they are well packed before they start to wither. Having access to an asian market would be a big plus if you like to add variety to your dishes.
