Scalloped Potatoes with four cheeses

Green and Red Pepper Masala

Ingredients:

  • 2 peppers, one red and one green
  • 2 tsp. poppy seedsĀ 
  • 1/8 cup dry coconut
  • 2 tsps. red chillie powder
  • 1 tsp Asafoetida
  • 1 tsp turmeric
  • 1 to 2 cups milk
  • 1 tsp cuminĀ 
  • 1 tsp mustard seeds
  • sprig curry leaves
  • 2 Tbsps. fresh coriander
  • salt to taste
  • 1 tsp. canola oil

Method:

Chop green and red pepper into 2" pieces. Dry roast the poppy sides and blend them to a powder. Add the coconut flakes and grind to a coarse mix.

In 1 tsp. oil, spurt mustard seeds, then add cumin. Next add the chopped green pepper. Now add the turmeric and red chillie powder. After the vegetables cook add milk and the powdered poppy/coconut powder. Let the mixture boil. Add salt and mix well. Finally garnish with the fresh coriander leaves.

Serve with rice or any Indian bread.
