Almond Halwa, the best recipe I have come across and tested

Pointer 1: Use whole almonds with skin

Ingredients:

  • 2 cups whole raw almonds
  • 1 cup pure granulated sugar
  • 3/4 cups ghee
  • Pure granulated sugar
  • 1 tsp saffron threads
  • 1/2 cup whole milk to help grind

Method:
Soak almonds in water and microwave until warm. Remove, soak in cold water. The skin should peel off very easily.

Grind almond to a smooth paste. Add milk as needed and consistence should be thick. This will lessen cooking time. Add saffron toward the end, spin blender just a couple times.

Use a non-stick calphalon pan. Warm pan, add 1 Tbsp. ghee. Let it melt. Now pour the ground almond mixture, the entire 3/4 cup of ghee and sugar. Keep stirring on medium heat until ghee separates. To get the consistency of halwa, remove contents of pan as soon as ghee separates. To be able to cut them into solid squares, keep the almond mixture on stove for 5 minutes longer.
